A great first time kayak is the Cobra Explorer or Fish & Dive. They're stable and easy to fish. Any of these are easy to tip if you want to, but they are also easy to never tip... As long as you are aware of what you are doing and boats around you (this is pretty easy) you should be fine. It is a great thing to take your yuk out and tip it a couple of times purposefully, because you get to know the limits of the boat and what it feels like if you are about to make a mistake that could send you for a swim. When you are new use a cleat and rope for your pole so you don't lose it if in case you go over. It's a great way to fish and just get out on the water!
