I've seen guys use the Octopus style hook for fluke. Looked like size 4/0 or 5/0.

BTW, the Daiichi Octopus hook is very similar (hard to tell the difference) and is often cheaper.

Great1, Like Jaiem, I use a 3/0 - 5/0 octopus hook when using larger baits. When using a simple squid and spearing/sandeel combo on lighter tackle, I use a Gami shiner hook, which is a wide gap hook. The thin wire construction of the shiner hook is easier to set on lighter line than the thick octopus hooks.

For fluke I prefer the Owner Lt Mutu Circles in 2/0 and 3/0 sizes. I switched to those last year and about 98% of the fluke were hooked in the jaw greatly reducing "gut-hooked" fish. They also handled fluke up to 7lbs with no problem.

Gama, didn't miss any more than usual, maybe even cut down on the amount of missed fish. I even tied a tandem rig with them when using a live snapper or cigar minnow(read:fluke candy)...one hook in the tail and one in its snout. I really like that hook...now they have them in a ringed version that I want to try when using live bait.

HOOKS

I use any of a few varieties of octopus hooks...I found the best sizes are 2/0-4/0...bigger hooks for bigger baits, I also put a flourescent float/bead above the hook which raises the bait off the bottom and gives it better action. Gamakatsu and Owner both make excellent hooks and are razor sharp...also check out the VMC cone cut hooks...they could be my favorite as they also come in an array of colors to jazz up the presentation in low light on the bottom they dont call them octopus so look for the salmon/walleye hooks those are the ones they are also our hooks for bass when we chunk and drag eels with larger sizes for the chunks. Never tried circle hooks for fluke but its worth a try so ill do that some time this summer.
