Depends on the total boat design, not just one aspect. Also, depends on the size of boat you want. Also, depends on what is an acceptable cruising speed for you. A boat with a keel will only cruise in the low 20knot range at best. Also, depends on your preferred type of fishing. Most deep vees will rock and roll when drifting. So if you are a shark fishing fanatic, I would say a deep vee is not a good choice. I like to do overnights to the canyons, and I think a lobster style flatbottomed keelboat in the 35 foot range is ideal, while still be sort of economical. I think it also makes a great all purpose boat.

I made the switch

I have had deep v express boats for a number of years and I finally,this year, stepped up to a keeled downeast style boat. Everything is a trade off. Yes my 35' express was fast 30kt boat, but if there was any chop 4+ i was slowing down to 14-16 kts. Also I ike a nice big ****pit. There is no room on the Express boats. some are better than others, but in general not much storage. We went with a 45' guimond. Big beamy vessel.
