Codfish chowda
1 large onion, saute in butter till brown.
add 5 or 6 bottles of clam juice.
add 1 cup vermouth
add small amount of salt and pepper
add 3 or 4 large potatoes cubed (same quantity as fish) slow boil til real soft
add 1 large container heavy cream and 1 can condensed milk (not sweetened).
turn down heat till simmer, add cubed cod fillets.
slowley cook till cod is fully cooked.
Use a large heavy duty stock pot to prevent milk from burning and stir very often after adding cream. For extra thick chowder, when the potatos are cooked, mash a few against the pot to thicken the soup.
Freezes excellent
Balckfish is a good alternative fish.
