Broiled skate wings with brown butter

Cooking Time:

1. Turn on the broiler. Set a rack 6 inches from the element. Have on hand a large roasting pan or a jelly roll pan that will not buckle under the heat of the broiler. Add a few drops of oil to the pan. Use your fingers to rub the oil all over the pan.
2. Set the skate in the pan and use the 1 tablespoon of oil to rub the top of the fish. Sprinkle it with salt and pepper. Slide the fish under the broiler. Cook the fish for 5 to 8 minutes without turning it until it is browned and cooked through (cut into the middle to check this).
3. Meanwhile, in a small saucepan, melt the butter. Add the capers and cook the butter until it browns. Set it aside.
4. Divide the fish among 4 dinner plates, add a spoonful of the brown butter to each piece of fish. Sprinkle with lemon juice and parsley. Serve at once with steamed potatoes.


I cannot take credit for this recipe, I pulled this from the web. I only posted it due to reading about some guys who were looking how to cook them. Hope it tastes as good as it sounds..
