Tequila & Citrus Marinade Servings: 4

1/4 c dark brown sugar
1/4 c lime juice (fresh squeezed)
1/4 c orange juice (fresh squeezed)
1/4 c tequila
1/2 red onion chopped

Combine ingredients in a Ziploc bag.

Cut fillet into serving sizes.  thick cuts of fillet work best. Avoid tail cuts if possible.  cutting away the blood line (red meat) is recomended.

Salt and pepper fillets and place in Ziploc bag to marinade for 2-3 hrs (don't use the same logic as beef and think that longer is better. you can't marinade overnight or anything like that. the acid will cook the fish too much and it will be dry and tough. if you want to do prep the night before make the marinade and leave the fish out of the bag until your ready)

Remove fish from marinade, place marinade in a med sauce pan (including onion) bring to boil and simmer on low while cooking fish on grill. Marinade should reduce to about half.

Pat Fish dry with paper towel, coat with olive oil and cook fish on grill on med - high heat 3-4 min each side. check fish for doneness. do not over cook, the cardinal sin of cooking fish.

Serve fish with a spoon full of marinade reduction on top.
