Fried Bluefish in Peanut oil Servings: 6

Clean you bluefish fillets, cut off all of the dark red meat. Once the fillets are clean, start cutting the fillet into cubes about an inch wide , by inch and a half. Once you fillets are completely cubed, put them into a tuperware container and soak in milk, let the fish soaked over night. This will take out most of that nasty oily tastes associated with bluefish. Once the fish are in the frig soaking, take a break till the next day..

The next day, take two  1/2 cups plain breadcrumbs and put into a bowl, then 4 tblspoons garlic powder, and one tblspoon cummin powder. Mix all three together till all intigrated. In another bowl scramble two eggs, in a third bowl put flour.

take a cube of meat out of the milk, roll it in the flour, then roll in the egg, then into the breadcrumbs.

In a large saucepan coat the bottom with peanut oil till about a half in deep. keep the heat dial at about 3/4 to high and you fish will burn.

Once your oil is ready to go, start putting the rest of the cubed fish through the same process, flour, egg, breadcrumbs..fry the fish until it is light brown,,, as you take them off the pan put the done pieces on a plate with some papertowels on it so the excess peanut oil will be soaked up. repeat process till all bluefish cooked.
The fish can be served wih lemmon wedges, or spiced up tartar sauce, I Do this by taking a tblspoon of guldens mustard and mix it wit the regular white tartar sauce,, gives it a little zing,.
