2-4 lbs. Striper Fillets
1/2 stick butter
1/3 cup olive oil
juice of 1 lemon
1 Tbsp. finely chopped onions
1/4 cup dry white wine
1 cup crushed Ritz crackers
salt and freshly ground pepper
1/8 tsp. Cayenne pepper

In a small fry pan, sauté onion in half the olive oil; and butter until just soft. Add lemon juice, wine, salt and pepper. Spread casserole dish with remaining olive oil. Place fillets in dish to cover bottom in a single layer: cut to fit if necessary. Spoon onion mixture over fish, leaving behind a little sauce. Sprinkle cracker crumbs over the top and pour remaining sauce over crumbs. Lightly dust with cayenne pepper.

Bake covered at 350F for 25 minutes, then uncover and cook 15 minutes more, or until fish flakes easily. Add a little wine if dish appears to dry out. Place briefly under boiler to brown crumbs slightly (don't burn).
