Tried this a couple of times, it was a change of pace from broiling. Tastes good, with the almonds.

Weakfish Amandine


-------------COPY & PASTE TO NOTEPAD & PRINT--------------

4 Weakfish fillets
1/2 pound butter
Bowl of milk
4 tablespoons flour
2 lemons, skinned, and chopped fine
4 tablespoons slivered, blanched almonds
salt & pepper, to taste

---------------TO MAKE YOUR INGREDIENT LIST----------------

Melt the butter in a large, flat pan. Wash the Weakfish fillets in salt water, and pat dry. Sprinkle with fillets with salt and pepper. Dip a fillet into milk, and sprinkle one side with 1 1/2 teaspoon of the flour. Place floured side down in the pan of butter to saute, and sprinkle again with another 1 1/2 teaspoons flour. Repeat with the other 3 fillets, and turn them to brown both sides, about 10 minutes each side.

Remove fillets, and add almonds to butter, and brown it. Then add the chopped lemon, and spoon it over the fillets.
