Stuffed Floppy Flounder Servings:

What you will need
5-6 Flounder Filets
10oz Frozen Spinach
1 can crab meat(chopped)
1/4-1/2 cup bread crumbs(italian)
1 onion
4-5 cloves garlic
1 stick of butter

To make the stuffing toss the spinach into the Microwave for about 10 min
Chop up onion and garlic(I like to use a chopper but leave some bigger pieces for texture)
Saute the onion and garlic with 1/2 stick of butter.
Let the spinach cool first and then squezze out the water(dont go crazy but squezze it good)
In a mixing bowl combine the Crumbs, onion,garlic,crab meat(I drain the crab meat but add some of the juice to the Onions and garlic you may want that liquid on the side if you add too much crumbs to the stuffing)and spinach and mix.(I do not use any measuring cups or anything so you may need to alter amounts, for instance if you only 4 filets I would only use 3/4 of the spinach)
O.K. Now you got your stuffing
Take the filets and brush with butter on both sides place nice amount of stuffing in middle fold and secure with Large toothpick or Ya know a wood stick I forgot what to call it

I like to use a 13 1/3-9inch pan
drizle some olive oil on the bottom and place stuffed filets in pan, I add any left over butter to the bottom of the pan and maybe a little white wine over the filets(this will give ya a nice sauce on the bottom) Bake 350-375 for 20-25min
