Crepes with Crab Sauce Servings: -2

This artery clogger, arguably is the best recipe I ever cooked!!! People keep asking me when I'm going to make it again. Oh, so good with fresh bluecrab meat. I TRIPLE the cheese sauce (but the recipe is posted as is), and refuse to feel guilty later.

Crepes with Crab Sauce

4 eggs
1/2 teaspoon curry powder
1/2 teaspoon salt
1 cup milk
1 cup unsifted flour
1/4 teaspoon paprika

Crab Sauce:

1 pound fresh backfin crab meat
3 tablespoons butter, or margarine
3 tablespoons flour
1 tablespoon chopped chives
1 tablespoon finely chopped green pepper
1/2 teaspoon salt
3/8 teaspoon black pepper
1 cup light cream, or half & half
1 tablespoon finely chopped onion
1/4 teaspoon dry mustard

Cheeese sauce:

1/4 cup grated swiss cheese
1/4 cup grated parmesan cheese
1/4 cup heavy cream, whipped

In a bowl, combine all crepe ingredients, and beat until smooth. Let stand for 1 hour. Heat a 7 inch non-stick skillet, and butter the pan lightly. Stir batter thoroughly. Spoon about 2-3 tablespoonfuls into the skillet, and rotate it to spread a thin layer of batter all over the pan. Brown the crepe on one side, and slide it out onto a sheet of foil. Repeat until batter is gone, should make about 12 - 15 crepes. Stack the crepes layered in foil and set aside.

Remove any cartilage from the crabmeat. In a saucepan, melt butter, and blend in flour, chives, green pepper, salt and 1/8 teaspoon of the pepper. Blend until smooth. Slowly add light cream or half & half, and cook over moderate heat, stirring constantly, until it boils and thickens. Remove from heat and add onion, mustard, the remaining pepper, and the crab meat. Turn lightly until blended. Place about 1/4 cup of this mixture into each crepe, and roll.

Place rolled crepes seam side down in a greased shallow baking dish.

In a small bowl, combine swiss cheese, parmesan cheese, and whipped cream and mix until blended. Top crepes with this mixture, and bake in a preheated 375 degree oven for 10 minutes, or until top is browned.
