1 lb of fresh fluke fillet-cut in 2 in pieces.
1/2 lb small shrimp-cleaned
1/2 teaspoon dried oregano(1tbl fresh oregano)
6-8  RIPE nj tomatoes (blanch and remove skins reserve liquid and chop in large pieces)
3/4 cup of chopped green onion(1/2 in pieces)
5-9 pieces of fresh garlic(chopped fine)
1/4 cup of good olive oil
1/8-to-1/4 teaspoon red pepper flakes (to taste)
6 oz of crumbled feta  cheese
16 oz box of orzo pasta

cook the orzo pasta and drain
in a large frying pan, add olive oil,garlic, green onion and oregano,cook 2 or 3 min till fragrant. add the ripe (skin removed by blanching)course cut tomatoes and their liquid,cook for 15 min on high heat.
add the fluke fillet pieces, cook for a few minutes till done,add the shrimp, cook till they change color (one minute)
add the red pepper flakes
add half of the feta cheese, mix the contents gently, serve over the orzo pasta--add the remaining feta cheese to each serving....chet's favorite summertime recipe....
