Albacore tuna salad Servings:

An albie will filet down to 4 pieces Use 2 for this recipe.
You will need a medium pot 3 cups of water,1/2 cup of white vinegar.

1 TBL spoon of sea salt 1 TBL spoon of celery salt ,olive oil and a colander:
1)Wash the filets and look for any dark brown meat, pare that off, it doesn't taste that great. Your filets should only be red meat.

2)Boil the water in the pot, have only enough water to steam the filets for about 20 minutes,pour the white vinegar over the filets, put some olive oil on the filets so they don't stick,  cover and steam for 20 minutes.

3)place the filets on a plate when done and look for dark meat ,it can be stripped off the filets easily,this is the key to having a great tasting salad . Once that is done, place the filets in the colander under running cold water and flake the fish.

4)Press the fish to remove excess water pick out dark meat if any left, place in bowl, add the sea salt and celery salt, add a TBLS spoon of olive oil.

5) You're done,add what you wish, mayo is fine but for a healthy lunch try adding some avocado puree instead.
