This is one way to cook bluefish that will make the average bluefish nay-sayer love to eat it.

First start will a bled blue-fish filet, salt, pepper, and old bay both sides of the filet.

Rub the bottom of a tinfoil sheet with butter, crimple up the sides and add 3 tbl of olive oil.

Place the fish on the tinfoil coat with a little olive oil. take 1/4 stick of salted butter, break into about 6 pads and spread out in the foil. cuts up 4 garlic cloves into pee size pieces and spread on in the foil as well. Pour 1/2 cup of white wine into the foi, cover and cook in the oven at 350 for 15-20 minutes.

*this recipe can apply to all fish, I like to cook striper this way as well, easy cleanup
