coconut macadamia bass kabobs Servings: 4
Estimated cooking time: 6 min Posted By: bigperpl food processor or blender,puree'pineapple,macadamia nuts and coconut cream. transfer to non reactive saucepan,bring to a boil,and simmer for 1 minute large bowl combine bass cubes,olive oil,lemon juice,garlic,sat and pepper.marinade at room temperature,tossing occasionally,for 30 minutes.soak skewers
3.prepare hot fire,thred bass onto skewers alternating red and yellow pepper squares between fish. reserve marinade
4. grill fish kabobs brushing with marinade about 8 minutes
note: i like to use grill basket that closes over kabobs and holds them tight this way nothing sticks to grill.

1 cup unsweetened pineapple chunks
1/2 cup macadamia nuts
1/4 cup canned cream of coconut
1lb stripedbass or firm fish cut into cubes
1/4 cup olive oil
1/4 tablspoon pineapple juice
2 cloves garlic/minced
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 red pepper cut to 1 inch squares
1 yellow pepper, cut to 1inch squares
