3 fresh caught fluke--filleted
package of chopped frozen spinach
several cloves of garlic
fresh feta cheese--bulgarian if possible
salt and pepper
american cheese slices
1 egg
evoo--extra virgin olive oil
in mixing bowl add thawed chopped spinach and fine chopped garlic salt and pepper and egg, mix till combined--
add chopped feta cheese--about a cup to spinach and mix gently
half each fillet length wise
salt and pepper each
add tablespoon full or two  of spinach mix to each fillet and  place a slice of american cheese over the spinach,roll from tail end to shoulder of each fillet, place rolled fillet in 9x12 baking dish that has a tablespoon or two of olive oil on the bottom.
fill and roll each fillet and place in baking pan.
salt and pepper the rolled fillets,drizzel a table spoon or two of olive oil over the top of fillets and bake for25-35 min at 370 degree oven, when fillets flake --its done.....chet
