Baked Whole Porgies Servings: 2

Needed:  4 medium sized Porgies, cleaned, scaled, finned and headed.  One cup of seasoned or unseasoned bread crumbs.  2 tablespoons of Adobe seasoning.  4 tablespoons of Virgin Olive Oil.  2 cloves of fresh Garlic.  Heavy duty silver foil.  One-quart zip-lock bag.

Line a baking pan with heavy duty silver foil - no cleanup needed.  Preheat oven to 450.  Wash the porgies carefully and shake off excess water.  Crush garlic into a cup and add 4 tablespoons of Olive Oil - mix and let it sit for a minute or two.  Spoon the Olive Oil in four strips onto the baking pan - each fish will be placed on top of one of these strips.  Place the bread crumbs and the Adobe into the zip lock bag – seal and shake.  Place a Porgie into the bag - seal - and shake like crazy.  Place the breaded Porgie in the baking pan over the Olive Oil and Garlic strip.  Repeat this with the other Porgies.  Bake the Porgies for 15 minutes, and then gently turn them over.  Bake another 15 minutes (total of 30 minutes).  Serve with you favorite veggies and ENJOY !!  Watch out for the bones – eaten slow they are a real treat.
