Coat fresh fillets,cut in half or thirds,depending on size, with equal parts kosher salt and brown sugar. Let cure overnite. Drain liquid and rinse well. Air dry approx. eight hrs. in fridge,preferably on rack.Season with fresh ground pepper and smoke dry and hot for 1 and 1/2 hrs. in a commercial smoker.
