Entree, Sea Bass
Jerk Seabass with a mango, pineapple salsa Servings: 4

4 pan dressed seabass 1-2lbs each (similiar fish like porgies can be substituted)
1/4 cup of lime or lemon juice
1/4 cup of salad oil
1tsp lemon/lime/orange grated peel
1tsp chopped or minced fresh garlic
1/4 cup chopped cilantro
2tbsp of orange juice
Jerk Seasoning to taste(can be found in most large supermarkets check in the ethnic/international section

Cut a few slits on each side of the fish
(this is to allow the marinade to penetrate the fish)
Next sprinkle and rub some jerk seasonig on the fish
Then pour some of the marinade over the fish. make sure save some to be used with the salsa.
Marinade for at least an hour ( the longer the better)
Bake in a slightly greased pan covered at 375dgrs
for at least 30-40 minutes

Salsa recepie
1 whole pineapple cut into small cubes
1 red pepper cut into small cubes
2 mangoes peeled and cut into small cubes
2 jalapeno peppers chopped
2tbsp red onions chopped
Mix all engridients and add remaining marinade mix
( if you prefer it spicier add more jalapenos)
Pour over the fish when the fish is ready
serve with a side of salad and to add a special touch a side of sweet potato fries.
