Pre-heat oven or grill to 400 degrees. Arrange striper steaks or fillets (tastes great with blackfish, too) in the middle of foil. Rub fish with small amount of butter. Cover fish with a tablespoon each of white cooking wine and water. Sprinkle with spice to taste. Salt and pepper alone works fine. I've also used garlic, ginger, cayenne pepper and Old Bay. Shave onions, carrots, and peppers (or a small amount of parsley)on top of fish. Close foil in a way which allows circulation. The first time you try this make four different fillets and take them off a minute apart so you you know how much time for your grill or oven. Enjoy!
