Glazed N Grilled Sea Bass Servings:

In a heavy saucepan combine the following ingredients, honey, orange juice, lemon zest, brown sugar, nutmeg and cayene pepper.  Bring to boil. Prepare fish by fileting and removing remaining bones along each filet (this can be easily done with the use of a small long nose plier).  Once the sauce has come to a boil, remove from heat, place filets into sauce and gently stir (this will partially poach them).  Next place the filets directly on a well oiled grill and sere at high heat until flesh is flakey.  You must closely monitor this part of the cooking process as it is very easy to burn the glaze.  Serve over your favorite rice.
