Have A question for everyone-

Anybody ever here of a recipe for Skate?

Never thought of Skate as a food fish...

Someone asked me about eating it. I dont think they are edible. Help me out here.

Best bet is to lay the skate on a piece of Oak and bake for 45 minutes. Remove from oven, throw away the skate and eat the oak.

ANDYLYD... great answere....got a good chuckle out of that one.....I heard the wings where OK, just would have to be a good size skate. Never tried it but with the fluke situation you might have a good point!

I have not idea how they taste but I see the wings on sale on all the Korean supermarkets

I heard some places uses skatewing instead of scallops.

have you ever seen sea scallops sold in the seafood dept.s at the supermarket,s . they look larger than your ordinary scallops , right . that's because there not scallops at all . they're the meat taken from the fin's of the skate's . they cut the fins off the skate and then they remove the skin . then they use a cookie puncture to cut the meat out round .so that it looks like a scallop . most people are not aware of this and they think that they are actually buying a larger scallop . the store's get away with this because they are advertising and selling them off by using the name . SEA scallops. SUPRISE , SUPRISE !!!!!

I have sting-ray, (I know it is not the same as skate but worth a try) all the time in flushing...it is amazing!!! They say they are so good because their primary forage is crabs and lobster. They wrap it, (whole) in banana leaves and cover it with black bean sauce and it is better than any other white meat fish. I also heard that bay scallops are often just wholes punched out of skate wings. I bet they do taste good as they eat most mollusks off the bottom.

I did see Emeril cooking a skate wing cajun style. Might be good. I have tried sea robin and that wasn't bad at all.

skate wings are the present darling of the gourmand set. understand they are braised. executive chef friend tells me sea riobin will be the next "HOT"

Skate is very good, flakey white meat. Skate w/ brown butter is a French delicacy. You need those big skates you get fluking or clamming for bass, not the small ones you get while bottom fishing.

Yeah, they punch out the wings and sell them as scallops. If the scallop is perfectly round it's a skate wing punchout.

ALL A CAN SAY ABOUT SKATE . SOME PEOPLE MAKE TERIPE SOUP OUT OF THE WINGS. MAKES A GOOD HANG OVER SOUP.

Hi, There are sea scallops and bay scallops which are two different species. A scallop will have a small white strip of flesh on the edge of the meat. This is how you tell. Marc

I've cut strips off the skate's wings to use as bait. Seems to make sense, the meat is very tough and stays on the hook. Results? The sea Robbins won't even touch it! I can't possibly fathom eating it myself, knowing how ugly and slimy they are. Mind over matter would force me to hurl on my first bite.

The New York Times Wednesday Food section from a couple of weeks ago had a skate receipe for Skate with brown butter, honey and capers. He took the Skate wings to a fishmonger to skin and was informed that there is no fish harder to skin. He Poached the fish and lifted the top and bottom from the central cartilage and served with the sauce. He also stated fillets of Skate when sauteed and lighty browned is delicious. This is the receipe in the paper. My wife said Martha S. had a chef on that did not fillet the wings, sauteed them and put a fancy sauce over them. ROB6

Don't let anyone fool you, skate is good eating. Here's how to prepare them easily. Cut off wings at body and trim thin areas around the outside (sissors are good for this).WATCH OUT FOR SPINES IN WINGS! Clean wings under running water (can be salt water). Pat dry and dredge in seasoned flour (something like Old Bay, or just salt and pepper).Fry in butter at medium heat in a non stick pan until crust forms turn over and fry on other side .Remove to a plate with a paper towel and keep warm.In same pan toss out old frying butter and put in two or three Tbls. of butter.Over medium heat fry butter until it turns brown WATCH IT CAREFULLY! brown not black. Here's the kicker add two Tbls. of CAPERS. They are pickled buds of the nasturtium plant and are found in the gourmet section of any supermarket.Heat the sauce and pour over the warm skate wings. Don't tell anyone about this recipe or skates will become endangered!

blasko, All of this nonsense about scallops being "stamped" out of skate wings is a left over World War I and 11 practise that is no longer used. If a purveyor or fish market tried it they would be in trouble. As for recipies go to the food network web site and search for skate or ray and you will have all the recipies you want also epicurious is a good site for recipies. www.foodnetwork.com www.epicurious.com Have fun choosing and eating your skate they are very delicious and have no bones. Skates are excellent and Italian, French, English, Chinese, Korean and plenty of other people eat them. You can go to Babbo Ristorante in the city if you want to try how it's really done.
