Entree, Striped Bass

This is a great dish I came up with one night.  Simple to make.  My girlfriend is not a big fish fan, but absolutely begs me for this one.  Give it a go...

Ingredients - (Servers 2)
-1 medium size Striped Bass Filet (cut into bite sized pieces)
-1 Tbl spn Chopped garlic (Garlic powder as backup)
-3 Tbl spn Butter or margarine
-1 small onion, diced (Red Onion preferably)
-1/2 Red Bell Pepper, chopped (Optional)
-1/2 Bottle of Italian dressing
-S & P to taste
-Sliced lemon or Lemon Juice
-Olive Oil

Steps-
-Preheat oven to 375 degrees.
-In a shallow baking dish, spread some olive oil on the bottom of the dish and then arrange the bite sized chunks of bass tightly along the bottom, 1 piece thick, try not to overlap the chunks too much.
-Sauté the onions, red peppers and garlic over a med-high flame, in olive oil, until soft (5 min).  Reduce heat.
-Add the butter or margarine to the sauté, stirring to melt.
-Next add the ½ bottle of Italian dressing, and a squirt of lemon juice.
-S&P to taste
-Next, pour your mixture over the bass chunks, spreading evenly.  The idea is to cook the fish covered in the mixture.
-Cover the dish with foil, and bake at 375 degrees for 15 minutes or until the bass chunks become flaky or the mixture begins bubbling.
-Do not over cook this dish.  Try your best to keep an eye on the fish, making sure to pull it out as soon as the chunks are cooked thru.  I will sometime pull the dish out early as the hot juices will continue to cook the fish even after it has been removed from the oven.
