Clean fillets, remove all red meat from fillet.  Cut the bass into four inch cubes.  Poach until cubes of fish are white and flaky.  Apprx. cooking time is 10 mins.  When done, place in colander and press out as much water as possible.  

While bass is cooking, sautee in the olive oil your onions, peppers, corn kernels, celery & carrots until tender.  Set aside.  

In a mixing bowl combine the mayo, mustard, eggs, Old Bay seasoning & sauteed vegetables.  Flake the cooked bass to the consistency of crab meat & add to your mixture & stir.  

SLOWLY add the italian bread crumbs until the mixture holds its shape for patties.  

You can either fry them in virgin olive oil with a little bit of butter or bake in the oven at 350 degrees for apprx. 30 minutes or until golden brown.  These should NOT be served hot, allow them to cool down for a few minutes for the best taste.  

Serve with tartar sauce (mayo, vinegar & relish to taste).  They're great reheated,nuked or served cold on a bun....ENJOY!
