CUT STRIPER FILETS INTO 2 1/2" STRIPS ACROSS THE FILLET...DIP IN FLOUR, THEN IN EGG...HEAT A LARGE FRYING PAN WITH  OLIVE OIL AND GARLIC.OIL SHOULD BE AT LEAST 1/2" IN PAN.COOK UNTILL GOLDEN BROWN..TAKE OUT FISH AND DRAIN OIL OUT OF PAN......PUT FISH BACK IN PAN......PUT 1/2 CUP OF CHICKEN STOCK,1/2 ORANGE JUICE.....AND COVER FOR 5 MIN......THEN TAKE 1 STICK OF SWEET BUTTER AND MIX IN UNTILL SAUCE THICKENS....TAKE FILLETS OUT AND THEN POUR SAUCE OVER FISH......ENJOY BABY.....
