Baked Flounder with Linguine Servings:

Take roasting pan and drizzle with olive oil.  Spread oil around pan so fish does not stick.
Take whole flounder (make sure gills are removed)
place in pan and just make 2 slices across fish with knife so fish cooks down to bone.
Add one cup of white wine and two cloves of garlic crushed into pan.  Add some salt and pepper on top of fish.  Bake fish at 450 degrees for about 25-30 minutes depending on size.  During cooking time check to make sure liquid is in bottom of pan.  If needed add some water or preferably fish stock. Do not add wine once it is already cooking.
When fish is done remove from oven and add chopped parsley. Remove fish from pan.  Take liquid from pan and add into tomatoe sauce(see below) and stir. Enjoy!

This goes well with Linguine in red sauce.
One can of tomatoes.  Two cloves of garlic. One tablespoon of tomatoe paste.  Salt and pepper to taste. Crushed red pepper to taste.

Heat olive oil in pan.  Add garlic making sure not to burn.  Add paste and cook about three minutes.  Add tomatoes salt and pepper, crushed pepper and cook about thirty minutes. Take liquid from pan and add to sauce. Stir and enjoy.
