Here is a recipe that i found in a popular fishing magazine, it sounded good, so I gave it a try. It was fabulous!
Cod Stuffed Potatoes

Ingredients:
1 1/2 pounds codfish fillets 1/2 dozen large baking potatoes 1 3/4 cups water 1 cup hot milk 1/2 stick butter, or margarine 1 1/2 tablespoons onion, chopped fine 1 tablespoon parsley 1 1/2 teaspoons dry mustard 1 1/2 teaspoons salt vegetable oil pepper to taste
Sauce: 1/4 pound bacon rendered fat from bacon 1/4 cup flour 1 cup milk 1 1/2 cups liquid from poached fish pinch of salt

Poach fish in water, in a greased pan, about 10 minutes. Cool fish and flake. Check for pieces of bone.
Save a cup and a half of the water.
Wash the potatoes, dry, and rub them with vegetable oil. Bake until done. Slice off the top of each potato and scoop them out empty into a large bowl and mash.
Heat the milk, and pour into the potatoes, and add the butter or margarine, chopped onion, parsley, mustard, salt and pepper. Stir in the fish. Stuff this mixture back into the potato shells, and set aside on a serving dish.
Fry the bacon until crisp, remove it to a paper towel, and set aside. Leave a little bacon fat in the pan, and pour the rest over the potatoes. Add the flour and salt to the pan, and blend it well. Slowly add the 1 1/2 cups of fish liquid and a cup of milk, and cook until thick. Break up the bacon into bits, and add to sauce. Pour this over the potatoes, and serve.
