Slice fresh catch of fluke or any other light white meat fish fillet (seabass, porgy, flounder, ling etc.).  Throw the slices in a small bowl.  Add chopped ginger and scallion.  Squeeze lime or lemon over the fish slices.  Add Thai fish sauce, extra virgin olive oil and asian chilli sauce.  Mix them well and serve.  And eat.

It's great with cold beer in summer!!
