porgie hole gutted

in a lobster style steamer add 1 inch water 1 shot glass sesame oil and grate fresh ginger to taste.on a full boil place porgie on rack for about 12 min.remove porgie to plate,pull skin back from belly up,stick fork under back bone.
push away from fish,this will remove skin ALL bones and head with one motion. what's left?
a big clump of white sweet meat.
