Marinated Striped Bass Servings:

1. Take a nice piece of S/B and about a 1/2 hour before cooking take the S/B and marinate in any good bottles Italian dressing.
2. Place fish in a shallow caserole dish. DO NOT PUT EXTRA MARINATE IN DISH.
3. Bake in a hot oven till almost done and remove.
4. Drain excess marinate and water from dish and turn your oven to BROIL.
5. Spinkle some FRESH dressing and some freshly ground pepper on top of fish. Use the dressing sparingly just enough to cover the fish then the pepper.
6. Place the dish under the broiler to crisp up the top. Try and stay a little away from the flame as there is oil in the dressing and will burn easily. Just brown the top.

It is important not to reuse the marinate. Sprinkle means just that, just a light coating of dressing ON THE FISH. Try not to let the dressing hit the dish.

Sit down and enjoy.
