From Martha Stewart Everyday Food- Great recipe!!

Cod with leeks and tomatoes

Serves 4, prep time 10 minutes, total time 35 minutes.
Can be made with other mild fish including halibut, sole, haddock.
Delicious warm, also great served cold the next day.

2 medium leeks, white & light green parts only, thinly sliced,
  rinsed well and patted dry
2 TBL fresh lemon juice
1 TBL olive oil
1 TBL freshly grated lemon zest
3 sprigs fresh thyme, or 1 tsp dried thyme
2½ cups cherry tomatoes (about 12 oz)
4 cod fillets, 6-8 oz each, ¾-1” thick

1- Preheat oven to 450º.  In a 9X13 baking dish, toss together leeks, lemon juice, oil, lemon zest, thyme, ½ tsp salt and ¼ tsp pepper. Cover with foil and bake until leeks just begin to soften, about 8-10 minutes.

2- Remove baking dish from oven.  Add tomatoes and toss to combine, spread out in dish. Season both sides of cod fillets with S&P, place on top of vegetables.

3- Cover the dish with foil and bake until fish is opaque throughout, about 15-20 minutes.  Serve immediately.

To prepare leeks, cut away root and dark green leaves.  Thinly slice the white and light green parts crosswise into rounds. Wash pieces in several changes of cold water until there is no more grit at the bottom of the bowl.  Drain on paper towels.
