make 1/8 inch thick slices of fluke fillet (sea bass, flounder, or any other white fish eaten raw can be substituted)  Fiah must be super fresh since it's eaten raw.

Squeeze some lemon or lime juice onto cold plate and then arrange the fish slices around the plate.

Drizzle high quality extra virgin olive oil over fish.  Then top each slice with a a little sprinkle of coarse sea salt.

Garnish (optional) with finely chopped fresh chive.  Serve chilled.  Eat immediately.
