Entree, Striped Bass
Tog McNuggetts

Servings:
Estimated cooking time: 10 minutes

This is for 2 good size tog fillets.....no specific weight.

I use about.............
1/2 cup of bread crumbs
1/2 half a cup of hungry jack pancake mix
4 Tbs grill masters seafood rub
2 Tbs lemon pepper
2 or 3 or 4 Tbs Emerils cajun spice...BAM
2 Tbs garlic salt
Clean and trim the fillets into about 1" to 2" cubes
Rinse fish and shake off excess water

Heat about a cup or so of Olive Oil(or whatever oil you like) in a pan, get it nice and hot first......you know how to test hot oil..lol

Rub fish in the mix pressing real good to ensure an even coat..you can dip them in an eggwash if you like.......I like them both ways.

Put Tog cubes in pan, it only takes a minute or so on each side.......then I put them on paper towel to drain excess oil and sprinkle some paprika

Also, if you have a basket type deep fryer....thats even better.

Serve with your favorite side

Sometimes I just make up a nice dish of Tog McNuggets and just snak on them alone

Play with the seasonings a bit to suit your taste.......don't be afraid to experiment..thats how good recipes are made......if ya come up with another tasty recipe.......post it up.
