Basic Bluefish Francese (or fish of choice)

Quick, basic, and can be done really with any fish of choice.

* Wisk an egg in a bowl with a splash of milk.

* Place all purpose flour (with salt and pepper to taste) in a second bowl.

* lightly cover the bottom of a frying pan with olive oil. Not too much, just enough to cover the bottom, and put over medium heat.

* trim and rinse your fillets to the portion size you like and then dip first into the egg (covering well) and next into the flour (covering well on both sides).  Place the fillets in the pan so that they are not overlapping and cook until they are a nice golden brown color on both sides.

* To make the sauce, add a can of chicken gravy, a can of chicken broth, and a healthy splash of white wine and lemon juice to a sauce pan.  You can also add a tablespoon of butter.  Simmer for a few minutes. Finally, add some to a dish with a piece of the fish in the center and serve.

Note: In my picture I did not have the chicken broth or gravy on hand, so I just simmered white wine, butter, and lemon juice.  Still good to give that nice tang.  I like to serve with steamed broccoli.  You can also sprinkle on some Parmesan cheese if desired.
