I usually keep it simple when grilling fish (like lemon juice, butter, white wine) because I like to enjoy the taste of the fish as much as possible. But sometimes I like a little kick:
rinsed fillets, put in a bowl with Open Pit brand BBQ sauce and Bullseye brand BBQ sauce and a few splashes of Franks Original hot sauce.
I put the fillets on my grill using a slotted metal fish tray so it wouldn't fall through the grill. I sprinkled Ms. Dash Chipotle seasoning on both sides to give it a kinda blackened or Cajun crusted feel to it. 6 minutes each side over medium flame. Served over the beans with a small scoop of salsa on the fish.
The beans were just a can of Goya Red Kidney beans, but I put a splash of Open Pit, Franks, and grated parmesan cheese to make it not so bland and to match the flavor of the fish.
