Found some old vacume sealed tuna steaks at the bottom of my freezer and didn't want to throw out, so: I smoked it in the usual way after brining several hours, with water, kosher salt, brown sugar, liquid garlic, liquid onion, lemon juice ect. Used hickory wood for smoke. After fish was cooked/smoked I let it cool in fridge. Then put fish in food proccessor,not too long. Mixed proccessed fish with horseradish and Philadelphia cream cheese, adding a little water to get consistancy if needed. Also used some bluefish same way separate batch to compare. Great on crackers w/couple of brews and a ball game.
