| Spicy, Old Bay Marinara Tog over Pasta |

Take a couple of well trimmed tog fillets. Boil a sauce pot full of water, add a few tablespoons of Old Bay crab seasoning. Place the filets in the boiling water, reduce heat, simmer for 5 minutes. Carefully remove the filets, drian the water slowly, try to save a little water, and the Old bay residue.
Cook your favorite sauce in the same pot, make sure its HOT (chile peppers, crushed red pepper, etc). Lots of garlic. Or buy a sauce, add to the pot, kick it up with fresh garlic, parsely, hot pepper, crushed red pepper, etc. A little cilantro adds another dimension too.
When the sauce is done, return the tog filets for a few minutes.
Serve over pasta.
